So today, I start my day with a Green or Red Smoothie. Today was Green! The ingredients sound weird all together but it tastes really good, I was surprised, as the thought of Spinach, apple, Avocado, Celery, Cucumber and Ginger in a drink would normally make me want to puke but it was rather nice a v filling, to the point of me having to leave it til later after a trip to the park for some much needed nice weather!
Lunch consisted of a veggie Lettuce wrap. I made loads just to make sure I was filled up but ended up popping some in a box for later. Amazing that a veg can fill you up like this. Really enjoyable selection of salads dressed with a pine nut and mustard dressing and wrapped in an Iceberg lettuce. Usually I would think they are rank but it was tasty. Finished off with some dried dates and Figs and I am good to go for the rest of my day. So at the mo I am loving the detox will keep you posted on how the week goes on!
Veggie Lettuce Wraps - Chicken or Parma Ham or Fish could be added.
Selection of Veg cut up
Iceberg Lettuce Leaves
Half a Cup of Pine Nuts (or Cashews)
1 tsp English Mustard
Water - you choose the consistency
Cut up a selection of salad type veg and add some seeds - carrots, peppers, spring onions, rocket, cucumber.
Blend all dressing ingredients until you get a smooth paste
Add dressing to bowl
Mix and season to taste
Divide Mixture into Leaves
